  • Geographic origin: Morocco (cultivation)
  • Harvest: Summer 2025, hand-picked at dawn
  • Part used: Whole buds (edible flowers)
  • Format: Whole dried flower

History and Cultural Tradition:

Rosa foetida is an ancient botanical species native to the foothills of the Caucasus and Persia, introduced to Europe in the 16th century through the territories of the Austrian Empire, hence the name "Austrian Briar". This rose revolutionized European botanical history: before its introduction, there were no native yellow roses on the continent.

Rosa foetida played a pivotal role in modern rose breeding. In 1900, French breeder Joseph Pernet-Ducher crossed Rosa foetida with a hybrid perpetual to produce 'Soleil d'Or', the first yellow hybrid tea rose, initiating the Pernetiana class of roses. All modern yellow and orange roses trace their ancestry to this single species.

In the Arab and Persian world, yellow rose buds have been used for centuries in culinary traditions and perfumery. Morocco, a major producer of fine roses alongside Bulgaria and Turkey, cultivates yellow roses following traditional methods passed down through generations.

Traditional Use:

According to Middle Eastern and European herbal traditions, yellow rose buds were used in infusion for their distinctive fragrance and to accompany moments of relaxation. Persian tradition attributed toning and invigorating properties to yellow roses, while in medieval European pharmacopoeia, roses were considered plants with astringent and refreshing virtues.

Natural Constituents:

Rosa foetida buds naturally contain:

  • Volatile aromatic compounds (geraniol, citronellol)
  • Flavonoids and polyphenols
  • Tannins
  • Carotenoids (responsible for intense yellow color)
  • Essential oils

Infusion Preparation:

  • Dosage: 1-2 teaspoons (2-3 buds) per cup (250ml)
  • Water: 95-100°C (203-212°F)
  • Steeping time: 5-7 minutes
  • Serving: Without filtering to appreciate buds opening in water

The infusion presents an intense and characteristic floral aroma, with sweet and slightly spicy notes. The liquor takes on a pale yellow-amber coloration.

Culinary Uses:

Yellow rose buds are versatile edible flowers:

  • Infusions and herbal teas (alone or in blends)
  • Decoration for cakes and desserts
  • Flavoring for syrups and jams
  • Addition to green tea or white tea blends
  • Preparation of rose water
